In May, I went away to California for a couple of weeks. At the beginning of August, Jeanne went to Spain for a yoga retreat. But before she left, she noticed this cute sign on a pole and took a free smile.

I definitely missed her while she was away, but I kept myself busy with playing games, taking First Date photos and building this!

I also bought a customized LEGO minifigure for Jeanne. I’ve since changed the hair on it, and I sometimes give her a different look, but the top is still the same.

When Jeanne returned from Spain, I delivered this to her at work, but I think she selfishly kept them all.

With Jeanne back in Ireland, we continued our summer of camping. She had heard that there was a Field of Dicks (Dick’s Field actually) in Ardmore, County Waterford, so we headed there first.  Ardmore is a nice beach town with an ancient round tower.

The following week we went to Arklow, County Wicklow. It’s another beach town, but instead of a round tower it has a pyramid!

While Jeanne was away, I got to eat anything I wanted, and I wanted some Pulled Pork.

Ingredients:

  • 5 pounds pork butt roast – mmm butt!
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 can beer
  • 12 ounces barbeque sauce

Directions

  1. Set the slow cooker to High.
  2. Place the pork in the slow cooker. Season top of pork with salt, pepper, onion powder, and garlic powder. Pour beer into the bottom of the slow cooker and place the lid on the slow cooker crock.
  3. Cook pork on High for 1 hour. Reduce slow cooker heat to Low and cook for at least 8 hours.
  4. Remove pork from the slow cooker and shred with two forks. Discard juices and rinse out slow cooker crock. Return shredded pork to slow cooker and stir barbeque sauce into pork
